    How do you make carbonara sauce? Is there really no cream in it? The recipes I found have egg yolk in them. Won’t that have a funny smell?

    Carbonara definitely should not have cream in it. I use whole eggs (do not let them cook) with some cooking water from the pasta and that combination is what makes it creamy.

    Carbonara can be tricky because you don’t want to cook the eggs. Once you get the hang of it, though, it’s a quick, simple dish to make. Also, don’t use ham or bacon and look for pancetta instead for a more authentic carbonara.
